This delicious coffee bean is from the Karatu area, in northeastern Tanzania. It is rich in sun ripeness and sweetness from the long drying process.

Tanzania is the world's 18th largest producer of coffee, accounting for approximately 0.6% of global coffee production. Approximately 70% of the coffee grown in the country is washed Arabica. Almost all Tanzanian coffee comes from family-owned farms located at an altitude of 1400-1800 meters.

The producer, Glenmalure, writes about the bean:

"This naturally processed coffee requires extremely careful selection during harvest. It is just reaching the vinous stage, and if we don't hit the perfect time, the coffee is lost."
However, it's not just us who hunt this coffee – our neighbors, the baboons, are just as keen to get their hands on the beans, just when the sweetness is at its peak."

About the cultivation and processing -

Organic coffee, harvested by hand, separation of impurities (bread, stones, leaves), washed and sorted by cherry quality (floating, ripe and unripe fruits), centrifuge process to remove excess water, pre-drying on the terrace cleaned of cement for 3 days and finally taken to the mechanical rotating horizontal dryer at a controlled temperature in the mass of maximum 35 degrees Celsius with rest breaks at night until achieving an ideal humidity of 11.5%.

About the green beans - Fazenda's Squeeze

Klem is a family-run coffee farm in Brazil that has been sustainable for over 10 years. They practice regenerative organic farming and also grow avocados, bananas and preserved forests. They recycle coffee husks to make biochar and produce their own energy from solar panels. They have a biofactory to produce microorganisms for plant health control.
Their work team enjoys good working conditions, and they prioritize sharing their best products with their customers.
Their coffee is Rainforest, USDA-NOP and Europe Organic certified.
Everything from production to processing happens on their farm.

Coffee cultivation on 200 hectares.
They grow a number of varieties, including Red Catucai 785 and Yellow Bourbon.
They use different processes such as natural drying and carbonic maceration.
