Imagine a cup that smells light and elegant, almost like a breeze through a cherry tree in full bloom. Sakura, with its 100% Arabica beans from Honduras, is not your typical coffee. The light roast highlights the delicate nuances of the beans, and the experimental process with yeast from Champagne adds a unique and sophisticated twist.

The body of the coffee is light and floral. You can expect a clean and light drink with a pleasant acidity reminiscent of bright fruits such as green apples or white grapes. With notes of apple, lime and grape, a fresh and sparkling dimension is added to the flavor profile. There may also be subtle floral notes, reminiscent of the name "Sakura" (cherry blossom in Japanese). The champagne yeast can contribute a light, sparkling sensation on the tongue and perhaps even a touch of sweetness that balances the acidity in an elegant way.

The aftertaste can be clean and persistent with a subtle fruity or floral touch.

"My mother and I together own 3.5 hectares of beautiful fields close to each other at an altitude of 1230 to 1300 meters.

We work with several varieties, such as Parainema, Obata and Bourbon, to offer a wide selection of microlots and something to suit every taste.

In addition to pine trees, which naturally dominate our region, we have also planted additional trees to create sufficient shade in all parts of the plantation. There are banana trees, but also American walnut trees, hazel pine, guamo and malcinca.

Our coffee is FTO certified, and we have been offering microlots since 2015.

I am a very enthusiastic and hard-working person who thrives when I can focus on multiple challenges at once, always with perfection in mind.

Although I currently hold various roles, my whole life revolves around coffee. It started in the cradle, when I was born into a fourth generation coffee farmer. But I am also the initiator of Cafesmo, where I develop various aspects of our organization, and my fiancé and I own a specialty coffee shop in the city of Santa Rosa de Copán. Here we serve single origin coffee and fine Honduran cocoa.

However, I still feel happiest when I wake up to a freshly brewed cup of coffee in my V60 and then take the two minutes to my finca to see how the newest plants are doing, or to manage the operations.

In the evenings, around sunset, as I sit on our patio with a cup of coffee, I often get inspired as I look out over the valley all the way to Chalatenango, El Salvador, which is only a few kilometers from my home. I like to think about the details and specifications of each microlot.

I have been preparing microlots since 2015 and love to experiment. With new or lesser-known varieties, with processes, especially anaerobic fermentation, and different types of bags or tanks. Sometimes it leads to very pronounced, even radical flavor profiles, extremely fruity, tropical, effervescent or with notes of sweet grapes and red wine. Spectacular, but not to everyone's taste."
